Title: Anyone have a good Salsa recipe?

The only thing that survived in my garden this year was my hot peppers, the deer ate everything else! My son wants to make salsa, and thought someone on here may have a good recipe.... :) How about you Term?

Salsa is easy. I like using

Roma tomatoes (seems the others are a bit too runny)
sweet onions
fresh cilantro
fresh lime juice
salt
fresh hot peppers

I used to chop everything by hand, but quickly stopped that after I discoverd that my food processor did a mighty fine job (just be careful and use the "pulse" function or you'll end up with soup)

I dont measure when I cook, so I can be pretty lousy at translating recipes, but I have a couple ideas.

1. I work with a couple guys who make incredible salsa, which I have imitated. It is a fresh (uncooked) salsa, which I always perfer, but it wont stay nice for more than a few days. They use, without good reference to proportions,

HOT peppers, leaving in LOTS of seeds (I dont do this)
Fresh roma tomatoes
onion (white or yellow)
Lots o' cilantro
lime juice
garlic, slat, pepper

2. I like chipotle pepper salsa- basically roasted jalepenos. You can buy them canned. Do the same sort of thing as above, but throw in some roasted sweet red bell peppers and corn to lighten the heat and add some sweet.

I'm hungry now!

granulated garlic
cumin powder
cilantro (sometimes-pretty good without it too)
and a squeeze from a half of a lime  

I usually don't put onion  


Have a pretty good Mango salsa recipe too  :)

Thanks everyone, he will have a blast making fresh salsa tonight!
I have a food processer so this should be pretty easy. I would love to have the mango salsa recipe also, NW, my youngest son just loves anything Mango!

Doc, those deer not only ate my garden, :'( have caused us two wrecked vehicles :-[ but they are the carriers of the deer tick that gave me my Lyme disease. >:(..so the least I should do is EAT them! :o..but on the other hand, if not for the Lyme, I wouldn't have my hot tub.... :-/
Isn't that a weird perspective on things? ;D ;D...

My wife makes a killer salsa. I think Anne's recipe is pretty close to what she does. Although she doesn't limit herself to just the roma tomatoes.  She'll use what ever she has in the garden.  She'll also leave it a bit chunky to give it some texture.   :)  The "Scoops" corn chips that are bowled shape work great too.    Good luck  :)

Mango Salsa:

mango (1 or 2)
bell pepper- green or red (probably about 1/3 of a pepper)
cilantro- fresh chopped
seasoned rice vinegar... probably about 2 tablespoons.
little bit (maybe a tsp- I don't measure it) sugar
jalapeno or serano pepper (I use serano a lot... just a little different flavor)
tomatoes... diced ( I usually use roma, but I am guilty of using whatever I have)
red onion (approx. 1/4 c. chopped)

I use all fresh ingredients dicing/chopping everything by hand.  Use how much you want of the hot peppers and cilantro, depending on your taste.

It is a huge hit at our place.

Something that is really good to go with the mango salsa is take flour tortillas lightly butter, sprinkle with cinnamon and sugar, bake at about 300-325, until dry and a little brown on edges, key is dry to be crispy chips.  Use to eat the salsa  ;)

btw i just made salsa. i use 3 jalapeno peppers, 1 sm. onion, handful of cilantro, plain canned diced tomatoes with juice and minced garlic salt and pepper. i put it in the little food processor on pulse and voila. i think it's much the same as everyone elses.
